Healthy Bites: Zucchini Carrot Bread

Sometimes, you've got to take your health into your own hands.

Usually, Healthy Bites is all about the lighter options at local restaurants. Sometimes, though, you have to take your health into your own hands.

Making zucchini carrot bread is a fun and wholesome way to enjoy healthy eats. Packed with healthy vegetables, protein with walnuts, and surrounded by moist bread, this scrumptious loaf will take your meal  to the next level.

Gather:
2 zucchinis, grated to equal one cup
3 carrots, grated to equal one cup
1 cup walnuts, chopped
1 egg, beaten

2 cups flour
1/2 cups sugar
1 tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/3 cup oil
1/2 cup milk

Make sure you have a baking or loaf pan close, either one large pan or two small pans will work. This bread holds for days and can go a long way as breakfast with coffee, a brunch snack or after dinner as dessert! You can even freeze it and save it for later. For more info, see cooks.com.

Directions:

1. Preheat your oven to 350 degrees. In a mixing bowl, stir together your dry ingredients: flour, sugar, baking powder, salt and cinnamon. Mix in the wet ingredients: egg, oil, and milk.

2. Add in grated vegetables, zucchini and carrots. Mix in your chopped walnuts and stir until blended.

3. Oil or butter your loaf pan well so your bread does not stick! Pour your mixture into the pan and bake at 350 degrees for up to 70 minutes, or until your knife comes out clean when testing.

4. Let cool, serve, and enjoy!

Slice this loaf thinly for a party or thick for a breakfast snack. Dress it up with some powdered sugar. After you create a heart-healthy holiday loaf, you'll be laughing at all those store bought no-no's.
